Pasta with smoked salmon and cheese

Hi guys! After have spent a day of relax outside the big city, I came back with a new recipe, easy, quick and delicious: Pasta with smoked salmon and cheese. I used an Italian typical cheese for it: Fresh Caprino. The name derives from the animal “capra”( in English it’s the goat). Maybe you’ve been wondering how many kinds of cheese are in Italy…Actually I don’t know..they’re so many! XD I tried this one with salmon and it’s perfect; it’s light, not rich and it perfectly melts when heated and becomes creamy.

Now let’s see the recipe for pasta with smoked salmon and cheese:

Pasta with smoked salmon and cheese

Ingredients (for 3 people):

240 g pasta

100 g smoked salmon

80g Caprino cheese

40 g onion

1 small glass of milk

oil

parsley to flavor at the end

Method:

Boil water and salt, then add pasta and let it cook. 5 min before it’s ready prepare the flavoring:

Sauté salmon, oil and onion in a pan:

salmone affumicatoThen add the fresh cheese and, with a small glass of milk, melt it with salmon, till it becomes a cream:

caprino e salmone_DSC0174When pasta is cooked until just firm, drain it and add it to the cream. Melt it with the flavoring at low heat.

_DSC0178 Finally flavor with parsley leaves..To me they give a special taste…And the dish is ready!
